It's more sophisticated if you spell it "Maccheroni"
Trader Joe’s and Costco: two great tastes that taste great together. I had some prefab pesto from Costco (pretty darn good actually), and mac & cheese from TJ’s (79 cents!). I put them together, added some stuff I had lying in the fridge (yes, there is something in there besides Michelob Ultra), and ended up with what tasted like actual food in the span of about 15 minutes.
If you were to sauté some mushrooms with garlic to add at the end and top with chopped parsley, this might almost look like something you could serve to guests. Very, very casual guests. But hey, that’s my favorite kind.
Pesto Mac & Cheese
Ingredients
1 box Trader Joe’s Macaroni & White Cheddar
1 head of broccoli, chopped to bite-size pieces
2 big handfuls spinach leaves
2 big spoonfuls prepared pesto sauce
splash of milk
small chunk of butter
1. Boil macaroni in salted water until almost done. Throw in broccoli when there’s a minute or two left to go. Add spinach at the last second, stir, and drain.
2. Return to pot. Add a glug of milk, the butter, and the cheese powder and stir until combined. Add pesto and stir.
3. Season with pepper and serve.
